Or two pans depending on your preference! We found this recipe a long time ago and realized that with adding a third child we needed this easy breakfast back in our lives more than ever. So we resurrected it and decided to share it with our friends that have been asking.

I usually use this recipe when gifting a meal to a friend or for meal prepping for the week. This also has been our Christmas breakfast since it’s easy to prepare the night before and then pop in the oven while opening presents!

There are two ways to do this! Cook meat and then bake in the same skillet or cook in a pan and then mix ingredients in a baking dish. If you are preparing to for the next day, I advise using a baking dish. Please do not put your skillet in the refrigerator! Also if you are gifting this dish use a disposable aluminum baking pan. You won’t have to worry about getting your pan back and your friend will not worry about clean up!

Breakfast Bake

Prep time 20 min / Cook time 35 min / Serves 6

Ingredients:

12 oz ground sausage

½ cup chopped bell pepper 

½ cup chopped onion

1½  cups of shredded potatoes (hash browns)

1 ½ cup of shredded cheddar cheese (reserve ½ cup for topping)

Batter:

1 cup flour

¼ tsp salt

1 ½ tsp baking powder

1 tbsp butter melted 

2 eggs 

Steps:

One: Heat oven to 400 degrees F.  If not baking in your cast iron or oven safe skillet, grease a 9×9 inch baking dish. 

Two: Brown sausage in a 10 inch skillet until no longer pink, add chopped onion and bell pepper until soft. Drain grease from pan and remove from heat. Set aside to cool.

Three: Mix flour, salt, baking powder, butter, pepper and eggs in a separate bowl to make a batter. 

Four: If cooking in skillet add 1 cup shredded cheese (reserve ½ cup for later), and potatoes and combine. Pour batter over mixture in skillet. If using a baking dish combine cooked meat, cheese and potatoes in dish and then pour batter over evenly. 

Five: Bake uncovered for 30-35 minutes or until an inserted knife comes out clean. Sprinkle remaining cheese on top and allow it to melt for 1-2 minutes in oven. Let cool for 5 minutes before serving. 

Reheating instructions: cover with foil and bake in oven for 20 minutes on 300 degrees.

This was formally a large recipe that serves twelve. But we rarely made the full thing unless splitting it for two families or cooking for guests. Just double the ingredients and either use two 9×9 inch pans or one 13×9 pan. Another tip for cooking evenly, rotate your pan 1/2 way through baking.
